Festival Flavour Stage: Liam Dillon

Liam Dillon is the chef and owner of The Boat. A Michelin starred modern British restaurant and micro-farm. Liam’s career spans some of the UK’s most notable restaurants, alongside international experience that helped refine his skills before returning to his hometown to launch his own ventures. When Liam purchased The Boat in 2017, it was a roadside pub. Since then, he has transformed it into a Michelin-starred restaurant and micro-farm, supplying much of the produce used in the restaurant.
